Pizza Mac and Cheese

This recipe was inspired because I needed to use up some prepared bags of Mac and Cheese. It seemed to boring so I did what I always to and spiced it up.

Pizza Mac and Cheese Casserole




I started by boiling a prepared bag of Mac and Cheese per the package instructions. If you want you can just start with Macaroni because there is enough cheese to not miss the powder cheese packet.



Then I added to the Mac and Cheese about 2oz of cream cheese, scoop of sour cream, and some shredded mozzarella and lots of cheddar cheese ( any amount is fine). This is where I will taste it to make sure it is spicy because I love spicy.

You can add all kinds of ingredient. Pepperoni, sausage, finely chopped onion, red peppers, and mushrooms to it. You can add an pizza seasoning you would like. For example: red pepper flakes, italian seasoning and celery salt. You can add some pizza sauce if you would like that but it is not a must.










I put the cheese in a pan and topped with of course more cheese, whatever flavor you like, some seasoned bread or cracker crumbs of your choice and a few pats of butter on top.


Bake the pizza mac and cheese at 350 degrees for about 30 minutes or until crumbs are toasted and the center is hot.

Beer Cheese Soup

This is a wonderful beer cheese soup that will warm you up and give you the extra protein you need to do all that spring cleaning. I you don't want to add the beer you can just add a little more chicken broth to equal that amount of beer you would normally add. Either way this soup is wonderful. I paired it with some cornbread. That recipe is in this blog if you want to look that up too.



Beer Cheese Soup




Sauté onion and garlic together for a few minutes then add 1 cup celery and carrots to the pan and cook until soft.Add 1tps hot pepper sauce, ½ tsp cayenne, ½ tsp salt and pepper or more if you like any of these ingredients.











Add 3 cups of chicken broth, and 2 cups of beer, 1/3 cup butter and stir to combine.Add slowly while stirring 1/3 cup flour to the beer cheese soup recipe.












Add 4 cups of milk or half and half to the beer cheese soup recipe.Stir until mixed well.Add 6 cups of shredded cheddar cheese or more if you like it creamy.Then add 1/3 cup of cream cheese and 1/3 cup of sour cream.











Last thing to add to this beer cheese soup is 2 TBS of Worcestershire Sauce, 1 TBS Dijon mustard, and 1 tsp dry mustard.









Simmer the beer cheese soup for 10 minutes and serve.I made cornbread to go with the recipe that is in this blog a couple of days ago.

Food Trailer Journey

We are now food truck owners and in the process of making head way to have the food trailer up and running this spring.  We are documenting our food trailer journey for all to see.  We almost have all the food trailer stickers peeled off thanks to my brother for helping.  I have my LLC articles, website and federal id #.

The Journey to food trailer owner

This blog will post my journey to becoming a food trailer owner operator. 


I will post pictures and ideas that help make the transition better. 




So lets get started.











I had my new used food trailer delivered yesterday.  I have posted pictures below and it needed to be cleaned out.  We will clean it up in the next few months along with takeing the proper classes to be able to serve food out of it.  We have already removed all the old cups and napkins. 


What I am amazed about is how confusing it is to understand what classes and certifications I need to get started.  I have spend many hours online and still don't know much more that I did when I started. 

This will be the journey of a dream and the road I took to get there.  I will lay out the research I did so maybe if can hlep the next person who wants to start a food truck or tailer.

Now begins the journey.
